Banana, Walnut and Date loaf

Yum!
I had a couple of black mouldy banana's at home so I thought I'd bake something other than Banana Muffins.
I found this recipe on Taste for Banana Date Loaf and had a look at the feedback for it and decided to alter the recipe a little...


  By the way.... Yes that is a whole in my loaf, and it was a little undercooked in the middle (note next time keep it in the oven just a little longer!)

And here's the recipe for you to try! Trust me it's awesome!!
Ingredients (serves 12)

    * 2 cups (300g) self-raising flour
    * 1 tsp bicarbonate of soda
    * 1 tsp cinnamon
    * A handful of pitted dates, chopped
* A handful of walnuts, chopped
    * 1/2 cup (115g) brown sugar
    * 1 cup (250ml) milk
    * 2 eggs
    * 2 large mashed bananas
    * Butter, to serve (optional)

 *Note: Add enough walnuts/pitted dates as you like.

Method

   1. Preheat oven to 180°C. 
Line a 24 x 13.5cm loaf pan with non-stick baking paper. Sift the flour, bicarbonate of soda and cinnamon into a large bowl. Stir through the dates, chopped walnuts and sugar.

   2. Combine the milk, eggs and banana in a separate bowl. Fold into the date mixture until well combined. Pour into the pan. 

Bake for 45-50 minutes or until a skewer inserted into the centre of the loaf comes out clean. Cool for 5 minutes. Turn out onto a wire rack to cool completely. Slice and serve with the butter if desired.

Checking in... 4 simple goals

Back in August I posted about 4 simple goals to complete before 2011.
It was inspired by Elsie Flanagan's 4 simple goals.

I wanted to check in and have a look at my four goals and where I'm sitting at achieving them right now:

1.Get my first tattoo
Complete! My tattoo took 2 hours, my artist Paulie from Kustome Kulture was amazing! I am SUPER happy with the result and totally love it!



2. Run a 12km fun run
I was meant to run in Run Geelong - 12km fun run on the 21st November. However next year I'm aiming to do a few more fun runs. Including my first half marathon!

3. Write in my journal each day
Boy this is hard! I try to, but still end up loosing days. I hate not recording things in there. I feel like I should have a different diary next year, so I can record things throughout the day. Like a dot point version you know?

4.Crafting projects (a week in the life + month of daily photos)
I'm planning my 'week in the life' for February next year. As I want to focus on Christmas now. So throughout December, I will take 1 photo a day, and scrapbook it like Kelly Purkey did in this post, love this layout and it's totally my inspiration!

Christmas is coming!

Christmas is here (well at my place anyway!)

I took a visit to Spotlight yesterday after thinking I might make some stockings for B and I this year!!

And I came home with more than expected! Yes all the Christmas stock was 25% off!

So here's what I brought home:


A mini (fake) Christmas Tree $2.99
Baubles $3.75
Fairy lights $4.50
 Christmas tree plate $2.99
Two pillar candles $13.98
 Glass votive $8.96

For a wreath (project tutorial to come):
Flat fat fabric $2.99
Embroidery Hoop $2.49
And for the stockings:
Linen and 'Vintage' fabric $15.00
2 packets of buttons $6.99

I got the tree because our living room is too small for a tree and us! I teamed the candle sticks I already had, with new red candles, the bronze glass tea-light candle holders and star fairy lights and added them to the mantle piece.

I love that my little bronze votive holders can be used all year round! Bargain!

magic happens...

Something magical happened over the weekend.

I witnessed two souls becoming one- a wonderful intimate (but fun) family wedding.
Weddings always make me happy.

Seeing two people bringing their families together, declaring their love, dancing, laughing and being merry is such a heartwarming experience.

It made me think of how truly in love and truly happy I am. That B and I make a great team. We compliment each other. I love him. That's all.


Just felt like saying it out loud!

Had their first 'real' and 'proper' overseas holiday to Thailand (Bangkok, Phuket, Krabi and Chiang Mai)

He found out about an upcoming job promotion.

She worked out more and more at the gym.

He drew lots of sketches for their house renovation.

She had her hair cut and coloured.

She + He celebrated their nephew's 2nd birthday.

Her brother came to visit.

She celebrated a friends birthday with drinks.

She + He went to see Paramore at Sidney Myer Music bowl.

She + He went took an Elephant for a ride, ate TOO many Spring rolls, explored Chiang Mai and drank lots of Leo and Singah beer!

my first tattoo....almost tattoo time!

So I had an idea of what I was after for my rib tattoo...

This one's from a CD cover... and I love the idea of simple black and grey shading...

.... and then I found Cristie via Danielle's super sweet blog 'Sometimes Sweet' and her 'Tattoo Tuesday" feature.

She featured Cristie's sweet shoulder tattoo and I love the simple styling of it...

So I emailed the sweet Cristie and she designed a tattoo for me! How cool?!



So I then took her sketch, my image and tried to combine the two. It will have shading in grey also! What do you think???

I have come to either the above one I drew or the one below:

 
Which do you prefer? I'm still only about 80% sure, but I'm leaning to the last image because it's a bit more feminine and I love the leaves rather than just a bare tree. But I love the idea that I drew the 2nd last one!

 My tattoo is booked in for the 27th November - I can't wait! :)

Maya Bay - in scrapbook form

Last night I sat down for a few minutes and scrapbooked.

It was great! 

I'd been to Big W and had a few Thailand photos printed for a mini album I'm making (pictures and a travel album tutorial coming up in a few weeks!) So I decided to scrapbook one of my favourite photos from the trip...
and a few close ups...




This was a super easy and quick layout for me to do, I think it was because it was a fresh memory, a photo I loved and I had new scrapbook products to use!

I'm going to scrap my favourite photos from Thailand and a few pages from each of the places we visited and over the next couple of weeks I'm creating a mini album that has the basic information about the trip and my favourite photos and bits and pieces.

I'll be posting a FREE tutorial about this and how to scrapbook your holiday/vacation photos quick and easy in the form of a mini album, while still being able to capture all your memories on paper.Stay tuned!

And I'm thinking it will liven up an otherwise plain bedroom. 
You see the company I work for manufactures MDF products, so you see, I could get them to custom make something for me, and I make it into a beautiful headboard!!

back into running...

I'm back....

and boy do I feel bad after eating my weight in spring rolls for the the past two weeks...

So I weaned my way into it by going for a walk with Jayne last night and then tonight I went for a run!


And I was faster than I was before I went on holidays! But boy did I sweat up a storm, I was so hot and sweaty and had to turn on the air con at home!

Run stats: 5.65km, 41.19minutes, 416 calories.

 I found this via Amy Tan's blog today and I see read things like this everynow and then and they resonate with me...



Every now and then I need to be reminded that some people aren't my life for a reason. I need to wake up and go to bed each night thinking of those who are STILL near and dear to me. Everything does happen for a reason. I am slowly getting there, my heart is slowly healing as time moves on.

It will be worth it. I know it.

I've landed back into reality today and struggling with the jetlag.
